- 4 large Flour tortillas
- 1 cup Canned black beans, drained and rinsed
- 0.5 cup Frozen or canned corn
- 1.5 cups Shredded Monterey Jack or Cheddar cheese
- 0.5 teaspoon Cumin
- 0.25 teaspoon Chili powder
- 1 tablespoon Butter or vegetable oil
- 2 tablespoons Fresh cilantro, chopped(optional)

In a small bowl, mix the black beans, corn, cumin, and chili powder together.

Lay out two tortillas and sprinkle a layer of cheese over one half of each.

Spread the bean and corn mixture evenly over the cheese-covered half.

Add another layer of cheese on top of the filling and fold the tortilla in half.

Heat butter or oil in a large skillet over medium heat.

Place the folded tortillas in the skillet and cook for 3-4 minutes per side, or until the tortilla is golden brown and the cheese is fully melted.
