Ingredients

  • 2 cups potatoes, diced
  • 1 cup bell pepper, diced
  • 4 ounces breakfast sausage, sliced
  • 2 egg
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped(optional)

Instructions

  1. 1

Heat the olive oil in a large skillet over medium heat; add the diced potatoes and cook, stirring occasionally, for about 5 minutes until they start to soften.

  2. 2

Add the sliced sausage and diced bell pepper to the skillet; season with salt and black pepper, and continue cooking for another 7‑8 minutes, stirring frequently, until the potatoes are golden and the sausage is browned.

  3. 3

In a separate pan, fry the two eggs sunny‑side‑up (or to your preferred doneness) while the hash finishes cooking.

  4. 4

Divide the hash onto two plates, top each portion with a fried egg, and garnish with chopped parsley if desired.
