Ingredients

  • 8 oz Ground beef (85% lean)
  • 1 tbsp Taco seasoning
  • 6 Small flour or corn tortillas
  • 2 Roma tomatoes, diced
  • 1/4 cup White onion, finely chopped
  • 2 tbsp Fresh cilantro, chopped
  • 1 Lime, juiced
  • 1 cup Shredded lettuce(optional)
  • 1/2 cup Shredded cheddar cheese(optional)
  • 1/4 cup Sour cream(optional)
  • 1/4 tsp Salt

Instructions

  1. 1

Dice the tomatoes, chop the onion and cilantro, and juice the lime. Combine in a bowl with salt to make the quick salsa; set aside (5 minutes).

  2. 2

Heat a skillet over medium-high heat and brown the ground beef, breaking it up as it cooks, about 5-6 minutes. Drain excess fat.

  3. 3

Stir in taco seasoning and 1/4 cup water; simmer until the sauce thickens and coats the beef, about 3-4 minutes.

  4. 4

While the beef simmers, warm the tortillas in a dry skillet or microwave for 30 seconds.

  5. 5

Assemble tacos: fill each tortilla with seasoned beef, top with quick salsa, lettuce, cheese, and sour cream if using. Serve with lime wedges.
