Beef Stir-Fry with Snap Peas

Thinly sliced steak flash-fried with crisp vegetables in a ginger-soy glaze.

Ingredients

  • 1 lb Flank steak, thinly sliced against the grain
  • 2 cups Sugar snap peas, trimmed
  • 3 tbsp Soy sauce
  • 1 tbsp Fresh ginger, minced
  • 2 cloves Garlic cloves, minced
  • 1 tsp Sesame oil
  • 2 tbsp Vegetable oil
  • 1 tsp Cornstarch
  • 1 tsp Brown sugar(optional)

Instructions

    In a small bowl, whisk together soy sauce, minced ginger, garlic, sesame oil, cornstarch, and brown sugar to create the sauce.

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat.

    Add the beef slices in a single layer and sear until browned, about 2-3 minutes. Remove beef from the pan and set aside.

    Add the remaining tablespoon of oil to the pan and toss in the snap peas. Stir-fry for 2 minutes until bright green but still crisp.

    Return the beef to the pan and pour the sauce over the mixture.

    Toss everything together for 1-2 minutes until the sauce thickens and coats the beef and peas.

    Serve immediately over steamed rice or noodles.
