Ingredients

  • 1 pound ground beef
  • 2 tablespoons taco seasoning mix
  • 1 can (15 oz) black beans
  • 1 can (14.5 oz) petite diced tomatoes
  • 1 cup jasmine rice
  • 2 cups water
  • 1 tablespoon avocado oil
  • 1 lime
  • 1/4 cup chopped fresh cilantro

Instructions

  1. 1

Rinse the jasmine rice and cook it with 2 cups water in a covered pot over low heat for 15 minutes, then fluff with a fork.

  2. 2

Meanwhile, heat the avocado oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up, until browned, about 6-8 minutes. Drain excess fat.

  3. 3

Stir in the taco seasoning mix, black beans (drained and rinsed), and petite diced tomatoes with their juices.

  4. 4

Simmer over medium heat for 8-10 minutes until thickened and heated through.

  5. 5

Squeeze the lime over the beef mixture and stir in the cilantro.

  6. 6

Spoon the rice into bowls and top with the beef and black bean mixture.
