Ingredients

  • 8 oz Ground beef (80/20)
  • 1/2 cup Black beans (canned, drained and rinsed)
  • 1 tbsp Taco seasoning
  • 1 tsp Olive oil
  • 2 Flour tortillas (8-inch)
  • 1/2 cup Shredded cheddar cheese
  • 1/4 cup Salsa(optional)
  • 2 tbsp Sour cream (for serving)(optional)

Instructions

  1. 1

Prep (10 minutes): Drain and rinse the black beans. Shred cheese if needed, and measure all ingredients.

  2. 2

Cook filling (5 minutes): Heat olive oil in a skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned. Stir in taco seasoning and black beans, cooking until heated through.

  3. 3

Assemble (5 minutes): Place tortillas on a clean surface. Spoon beef-and-bean mixture over one half of each tortilla and sprinkle with cheese. Fold over to form quesadillas.

  4. 4

Cook quesadillas (10 minutes total cook time): Wipe out any excess grease if needed. Cook quesadillas in the same skillet over medium heat for about 3–4 minutes per side, until golden and the cheese melts. Serve with salsa and/or sour cream if desired.
