Ingredients

  • 1.5 lb ground turkey
  • 1/2 cup barbecue sauce
  • 1/2 cup quick oats
  • 1/2 yellow onion, finely diced
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 cups diced potatoes
  • 1 cup sliced carrots
  • 2 tbsp avocado oil
  • 1 tsp paprika

Instructions

  1. 1

Preheat oven to 400°F. Toss diced potatoes and sliced carrots with avocado oil, paprika, salt, and pepper on a sheet pan; set aside.

  2. 2

In a bowl, mix ground turkey, quick oats, onion, garlic powder, salt, pepper, and 1/4 cup of the barbecue sauce until just combined.

  3. 3

Shape into a loaf in a baking dish and spread remaining barbecue sauce over the top.

  4. 4

Place the sheet pan of vegetables on the lower rack and the meatloaf on the middle rack. Bake 35-40 minutes until the meatloaf reaches 165°F internally and vegetables are golden, tossing vegetables halfway.

  5. 5

Rest the meatloaf 5 minutes, slice, and serve with the roasted vegetables.
