Ingredients

  • 2 medium sweet potatoes
  • 1 cup shredded cooked chicken (BBQ chicken)
  • 1/4 cup barbecue sauce
  • 2 cups shredded cabbage (slaw mix)
  • 2 tbsp mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp honey(optional)
  • 1/8 tsp salt(optional)
  • 1/8 tsp black pepper(optional)

Instructions

  1. 1

Preheat oven to 425°F (220°C). Scrub sweet potatoes, pat dry, and pierce each with a fork.

  2. 2

Bake sweet potatoes for about 35 minutes, until very tender when squeezed. (No need to flip.)

  3. 3

While potatoes bake, stir shredded chicken with barbecue sauce until evenly coated.

  4. 4

Make quick slaw: toss shredded cabbage with mayonnaise, apple cider vinegar, and honey (if using). Season with salt and black pepper to taste.

  5. 5

When potatoes are done, split them lengthwise and fluff the insides with a fork. Spoon BBQ chicken into each and top with slaw. Serve immediately.
