- 1/2 cup BBQ sauce
- 4 pieces Large flour tortillas
- 1 1/2 cups Shredded Monterey Jack cheese
- 1 cup Shredded sharp cheddar cheese
- 1/4 cup Red onion, thinly sliced
- 2 tablespoons Fresh cilantro, chopped
- 2 tablespoons Butter
- 1 tablespoon Pickled jalapeños(optional)
- 1/2 cup Sour cream for serving(optional)

In a medium bowl, toss the shredded chicken with the BBQ sauce until evenly coated.

Place one tortilla on a flat surface and sprinkle a quarter of the mixed cheeses over one half of the tortilla.

Layer a quarter of the BBQ chicken, red onions, and cilantro over the cheese layer.

Fold the tortilla in half to create a half-moon shape.

Melt a small amount of butter in a large skillet or griddle over medium heat.

Place the quesadilla in the skillet and cook for 3-4 minutes until the bottom is golden brown and crispy.
