Ingredients

  • 2 cups Cooked chicken breast, shredded
  • 0.5 cup BBQ sauce
  • 4 pieces Large flour tortillas
  • 1.5 cups Shredded Monterey Jack cheese
  • 1 cup Shredded sharp cheddar cheese
  • 0.25 cup Red onion, thinly sliced
  • 2 tablespoons Fresh cilantro, chopped
  • 2 tablespoons Butter
  • 1 tablespoon Pickled jalapeños(optional)
  • 0.5 cup Sour cream for serving(optional)

Instructions

    In a medium bowl, toss the shredded chicken with the BBQ sauce until evenly coated.

    Place one tortilla on a flat surface and sprinkle a quarter of the mixed cheeses over one half of the tortilla.

    Layer a quarter of the BBQ chicken, red onions, and cilantro over the cheese layer.

    Fold the tortilla in half to create a half-moon shape.

    Melt a small amount of butter in a large skillet or griddle over medium heat.

    Place the quesadilla in the skillet and cook for 3-4 minutes until the bottom is golden brown and crispy.

    Carefully flip the quesadilla and cook for another 3 minutes until the cheese is fully melted and the second side is browned.
