Ingredients

  • 2 pounds Beef brisket (flat cut)
  • 2 tablespoons Brown sugar
  • 1 tablespoon Paprika
  • 1 tablespoon Kosher salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • ½ teaspoon Cayenne pepper
  • ¼ cup Apple cider vinegar
  • ½ cup Ketchup
  • 2 tablespoons Honey
  • 1 tablespoon Worcestershire sauce

Instructions

  1. 1

Combine brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper in a bowl to create the dry rub.

  2. 2

Pat the brisket dry, then coat it evenly with the dry rub, pressing it into the meat; let it rest at room temperature for 10 minutes.

  3. 3

Preheat a smoker to 225°F (107°C) and add wood chips of choice.

  4. 4

Place the brisket on the smoker grate, fat side up, and smoke for 4 hours, maintaining temperature.

  5. 5

In a saucepan, whisk together ketchup, apple cider vinegar, honey, and Worcestershire sauce; simmer 5 minutes to form the glaze.

  6. 6

After 4 hours, brush the brisket with half of the glaze, then continue smoking for another 2 hours, brushing with remaining glaze every 30 minutes.

  7. 7

Remove the brisket when internal temperature reaches 203°F (95°C); let it rest covered for 20 minutes before slicing against the grain.
