Ingredients

  • 1/3 cup Jasmine rice (or long-grain white rice)
  • 1 cup Water
  • 1 cup Milk (dairy or unsweetened soy)
  • 1/2 cup Coconut milk (canned, full-fat)
  • 1 medium Bananas, ripe
  • 2 tbsp Shredded coconut (sweetened or unsweetened)(optional)
  • 1 tbsp Brown sugar(optional)
  • 1/4 tsp Ground cinnamon(optional)
  • 1/8 tsp Salt(optional)

Instructions

  1. 1

Rinse the rice, then add it to a small saucepan with the water, milk, coconut milk, salt, and cinnamon. Bring to a gentle simmer over medium heat.

  2. 2

Reduce heat to low and cook, stirring every few minutes, until the rice is tender and the mixture is creamy, about 20–25 minutes.

  3. 3

While the rice cooks, mash the banana in a bowl. Stir the mashed banana into the pudding, then cook for 1–2 minutes to warm through.

  4. 4

Remove from heat and stir in shredded coconut. Taste and sweeten with brown sugar if desired. Let stand 2–3 minutes to thicken, then serve.
