- 14 ounces Whole roasted green chiles
- 2 cups Monterey Jack cheese, shredded
- 2 cups Sharp cheddar cheese, shredded
- 4 pieces Large eggs
- 1/4 cup All-purpose flour
- 12 ounces Evaporated milk
- 1/2 teaspoon Salt
- 1/4 teaspoon Ground black pepper
- 1 teaspoon Hot sauce(optional)
- 2 tablespoons Fresh cilantro, chopped(optional)

Drain the green chiles thoroughly and pat them dry with paper towels to prevent a watery casserole.
