Ingredients

  • 200 g Linguine
  • 1 Ripe avocado
  • 1/2 cup Fresh cilantro leaves
  • 2 tbsp Olive oil
  • 1 tbsp Lime juice
  • 1 Garlic clove
  • 2 tbsp Toasted pepitas (pumpkin seeds)
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper

Instructions

  1. 1

Cook the linguine in a large pot of salted boiling water according to package directions (about 9‑11 minutes), then drain, reserving 1/4 cup of pasta water.

  2. 2

While the pasta cooks, combine the avocado flesh, cilantro, olive oil, lime juice, garlic, salt, and pepper in a food processor; blend until smooth, adding reserved pasta water as needed to achieve a creamy sauce consistency.

  3. 3

Toss the hot linguine with the avocado‑cilantro pesto, coating evenly; serve immediately topped with toasted pepitas.
