Ingredients

  • 1 15oz can Canned Cannellini Beans
  • 1 large Ripe Avocado
  • 1 tablespoon Lime Juice
  • 2 units Large Flour Tortillas
  • 1 cup Fresh Spinach
  • 2 tablespoons Red Onion(optional)
  • 1 pinch Salt and Black Pepper

Instructions

    Rinse and drain the white beans thoroughly.

    In a medium bowl, combine the beans, avocado, lime juice, salt, and pepper.

    Mash the mixture with a fork until creamy but still slightly chunky.

    Lay the tortillas flat and spread the bean and avocado mixture evenly across the center.

    Top with fresh spinach and minced red onion if using.
