Ingredients

  • 450 g Yukon Gold potatoes
  • 1/2 medium Yellow onion
  • 2 tbsp Unsalted butter
  • 1 medium Apples (Honeycrisp or similar)
  • 2 cloves Garlic
  • 2 cups Chicken or vegetable broth
  • 3/4 cup Cheddar cheese (sharp)
  • 1/2 cup Milk
  • 1 tbsp Apple cider vinegar
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1

Prep (10 minutes): Peel and dice the potatoes; dice the onion and apples; mince the garlic; grate the cheddar.

  2. 2

Cook (30 minutes): In a pot, melt the butter over medium heat. Sauté the onion until softened, about 3 minutes, then add the garlic and cook 30 seconds.

  3. 3

Add the diced potatoes and broth. Bring to a simmer and cook until the potatoes are tender, about 18 minutes.

  4. 4

While the potatoes cook, sauté the apples in a small pan over medium heat until slightly softened, about 7 minutes.

  5. 5

Blend and finish: Mash or partially blend the soup to thicken. Stir in the sautéed apples, milk, cheddar, and apple cider vinegar. Cook 2–3 minutes until the cheese melts and the soup is creamy. Season with salt and black pepper to taste.
