  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 3 cloves garlic
  • 2 tbsp fresh parsley
  • 1/2 tsp dried oregano
  • 1 tbsp lemon juice
  • 10 oz baby spinach
  • 1/2 cup heavy cream
  • 2 oz cream cheese
  • 1/4 tsp garlic powder
  • 1/4 cup grated Parmesan
  • 1/4 tsp red pepper flakes(optional)
  • 2 tbsp water(optional)

Instructions

    Prep (18 minutes total): Pat fish dry and season both sides with salt and black pepper. Mince the garlic and chop the parsley.

    Prep (18 minutes total): Make the garlic-herb butter by melting the butter in a small bowl (or microwave-safe cup), then stir in minced garlic, parsley, oregano, and lemon juice.

    Cook (16 minutes total): Preheat a grill or grill pan to medium-high. Brush fish lightly with olive oil and grill 4–5 minutes per side (until just cooked through).

    Cook (16 minutes total): While the fish grills, heat a skillet over medium heat. Add spinach and a splash of water (if using) and cook 2–3 minutes until wilted.
