  • 2 cups cooked chicken breast, shredded
  • 8 cups chicken broth
  • 2 cups wide egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery stalks, sliced
  • 0.5 cup yellow onion, diced
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried oregano
  • 1 to taste salt and black pepper
  • 2 tablespoons fresh parsley, chopped(optional)

    Heat olive oil in a large pot or Dutch oven over medium heat.

    Add the diced onion, carrots, and celery; sauté for 5-7 minutes until the vegetables begin to soften.

    Stir in the minced garlic, thyme, and oregano, cooking for 1 minute until fragrant.

    Pour in the chicken broth and bring the mixture to a rolling boil.

    Add the egg noodles to the boiling broth and cook according to package directions, usually about 6-8 minutes.
