Ingredients
- 1.5 lbs boneless skinless chicken breasts
- 2 tbsp avocado oil
- 2 cups cottage cheese
- 0.5 cup hot sauce (cayenne pepper sauce)
- 3 tbsp unsalted butter
- 0.5 cup buttermilk
- 2 tbsp fresh chives
- 1 tbsp fresh dill
- 1 tsp garlic powder
- 1 tsp onion powder
- 0.5 tsp salt
- 3 celery stalks
- 2 carrots
- 2 scallions
Instructions
- 1
Pat the chicken breasts dry and cut them into bite-sized pieces. Season with salt, garlic powder, and onion powder.
- 2
Heat the avocado oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 10-12 minutes, turning occasionally, until golden brown and cooked through to 165°F internally.
- 3
While the chicken cooks, make the ranch: whisk together the buttermilk, chives, dill, a pinch of salt, and a pinch of onion powder. Refrigerate until ready to use.
- 4
Cut the celery and carrots into thin sticks and thinly slice the scallions.
- 5
Melt the butter in a small saucepan over low heat, stir in the hot sauce, and simmer 2 minutes to make the buffalo sauce.
- 6
Toss the cooked chicken pieces in the buffalo sauce until evenly coated.
- 7
Divide the cottage cheese among 4 bowls. Top with the buffalo chicken, celery sticks, and carrot sticks. Drizzle with the buttermilk ranch, scatter scallions over the top, and serve immediately.
