Ingredients

  • 1.5 pounds Pork baby back ribs
  • 1/4 cup Bourbon (preferably low‑sugar)
  • 1/4 cup Low‑sodium soy sauce
  • 2 tablespoons Erythritol (or other zero‑calorie sweetener)
  • 3 Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 1 tablespoon Apple cider vinegar
  • 1 tablespoon Olive oil
  • 1 teaspoon Smoked paprika
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Salt

Instructions

  1. 1

Preheat a smoker to 225°F (107°C). Pat the ribs dry, remove the membrane, and season both sides with smoked paprika, black pepper, and salt.

  2. 2

In a saucepan, combine bourbon, soy sauce, erythritol, minced garlic, grated ginger, apple cider vinegar, and olive oil. Bring to a gentle simmer, then reduce heat and let the glaze thicken for about 8 minutes, stirring occasionally.

  3. 3

Place the seasoned ribs on the smoker rack and smoke for 60 minutes, spritzing with a thin brush of the glaze every 15 minutes to build flavor without burning.

  4. 4

After smoking, preheat a grill to medium‑high heat. Brush the ribs generously with the remaining glaze and grill for 5‑7 minutes per side, allowing the glaze to caramelize into a sweet‑savory crust.

  5. 5

Remove ribs from the grill, let rest for 5 minutes, then cut into serving portions and serve immediately.
