Ingredients

  • 1.5 lb Pork belly, skin removed
  • 1 tsp Kosher salt
  • 0.5 tsp Black pepper
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 0.75 cup Sugar-free BBQ sauce
  • 2 tbsp Apple cider vinegar
  • 3 cups Green cabbage, shredded
  • 0.33 cup Mayonnaise
  • 1 tbsp Dijon mustard
  • 0.5 tsp Celery seed(optional)
  • 2 Green onions, sliced(optional)

Instructions

  1. 1

Preheat oven to 275°F (135°C). Pat pork belly dry and cut into 1.5-inch cubes. Season all over with salt, pepper, smoked paprika, and garlic powder.

  2. 2

Place cubes on a wire rack over a foil-lined baking sheet and smoke-smother bake for 2 hours until tender but not falling apart.

  3. 3

Toss the cubes in apple cider vinegar, then increase oven to 400°F (205°C) and roast 20 minutes to crisp the outsides.

  4. 4

Meanwhile, make the slaw: whisk mayonnaise, Dijon mustard, celery seed, and a pinch of salt; toss with shredded cabbage. Chill until serving.

  5. 5

Transfer pork cubes to a bowl, add sugar-free BBQ sauce, and toss to coat. Return to the oven for 10 minutes until lacquered and sticky, tossing once halfway.

  6. 6

Rest 5 minutes, then serve burnt end bites topped with green onions alongside the tangy slaw.
