Ingredients

  • 200 g linguine
  • 6 pieces large shrimp, peeled and deveined
  • 4 pieces sea scallops
  • 1/2 cup cucumber
  • 1/3 cup lime juice
  • 1 piece serrano chile, finely chopped
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp olive oil
  • to taste salt
  • to taste black pepper

Instructions

  1. 1

Cook the linguine in salted boiling water until al dente, about 8-9 minutes; drain and rinse briefly with cold water to stop cooking.

  2. 2

While the pasta cooks, combine lime juice, chopped serrano chile, olive oil, salt, and pepper in a large bowl to form the aguachile broth.

  3. 3

Add the shrimp and scallops to the broth and let them marinate for 3‑4 minutes until they turn opaque.

  4. 4

Toss the cooked linguine with the marinated seafood and broth, then fold in the cucumber and cilantro.

  5. 5

Serve immediately, adjusting seasoning with extra lime or salt if needed.
