Ingredients

  • 1 lb pork shoulder (boneless), cut into 1-inch chunks
  • 1 tbsp adobo-style spice blend (see below)
  • 2 tbsp apple cider vinegar
  • 1/2 cup orange juice
  • 3 cloves garlic, minced
  • 1 tbsp chipotle in adobo sauce
  • 1 tsp brown sugar
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup water
  • 1 tbsp lime juice

Instructions

  1. 1

Prep (15 minutes): In a bowl, mix the adobo-style spice blend (1 tbsp total) with salt and black pepper. Add chipotle in adobo sauce, brown sugar, vinegar, orange juice, garlic, and water; stir to combine.

  2. 2

Instant Pot cook (55 minutes): Add pork to the Instant Pot and pour the adobo mixture over the top. Seal and cook on High Pressure for 45 minutes, then allow a 10-minute natural release before quick-releasing any remaining pressure.

  3. 3

Finish (15 minutes): Remove pork to a sheet pan and shred with two forks. Spoon a little cooking liquid over the pork, then broil 5–8 minutes until edges caramelize. Drizzle with lime juice and serve.
