Ingredients
- 2 lbs Chicken thighs, bone-in skin-on
- 0.5 cup Soy sauce
- 0.33 cup White vinegar
- 6 cloves Garlic, smashed
- 1 tsp Whole black peppercorns
- 3 leaves Bay leaves
- 1 tbsp Brown sugar(optional)
- 1 tbsp Cooking oil
Instructions

In a large bowl, combine chicken, soy sauce, and garlic. Marinate for at least 30 minutes, or up to 4 hours in the fridge.

Heat oil in a large skillet or pot over medium-high heat. Remove chicken from marinade (save the liquid) and brown the chicken pieces on both sides.

Pour in the reserved marinade, vinegar, peppercorns, and bay leaves. Bring to a boil.

Reduce heat to low, cover, and simmer for 25-30 minutes until chicken is tender.

Remove the lid and stir in the brown sugar if using. Increase heat to medium-high and simmer for another 5-10 minutes until the sauce reduces and thickens into a glaze.

Serve hot over steamed white rice.
