Chicken Adobo

Chicken thighs braised in a tangy and salty mixture of vinegar, soy sauce, garlic, and peppercorns.

Ingredients

  • 2 lbs Chicken thighs
  • 0.5 cup Soy sauce
  • 0.33 cup White vinegar
  • 6 cloves Garlic
  • 3 pieces Bay leaves
  • 1 tsp Whole black peppercorns
  • 1 tbsp Brown sugar(optional)
  • 1 tbsp Cooking oil

Instructions

    In a large bowl, combine chicken, soy sauce, and minced garlic. Marinate for at least 30 minutes.

    Heat oil in a large pan over medium-high heat. Remove chicken from marinade (save the liquid) and brown the chicken pieces on both sides.

    Pour in the remaining marinade, vinegar, bay leaves, and peppercorns. Bring to a boil.

    Reduce heat to low, cover, and simmer for 30 minutes until chicken is tender.

    Remove the lid and stir in brown sugar if using. Simmer for another 5-10 minutes until the sauce thickens and reduces to a glaze.

    Serve hot over steamed white rice.
