Ingredients
- 2 lbs chicken thighs
- 0.5 cup soy sauce
- 0.33 cup cane vinegar or white vinegar
- 6 cloves garlic, minced
- 1 tsp whole black peppercorns
- 3 dried bay leaves
- 1 tsp brown sugar(optional)
- 1 tbsp cooking oil
- 1 cup water

In a large bowl, combine chicken, soy sauce, and minced garlic. Marinate for at least 30 minutes, or ideally overnight in the refrigerator.

Heat oil in a large pot over medium-high heat. Remove chicken from marinade (save the liquid) and brown the chicken pieces on both sides.

Pour in the remaining marinade, water, peppercorns, and bay leaves. Bring to a boil.

Reduce heat to low, cover, and simmer for 25-30 minutes until chicken is tender.

Pour in the vinegar. Do not stir immediately; let it simmer for 5 minutes to cook off the raw acidic taste.

Add brown sugar if using. Stir and simmer uncovered for another 5-10 minutes until the sauce reduces and thickens to your liking.
