Ingredients

  • 2 cups Cooked day-old rice
  • 1 cup Mixed vegetables (peas, carrots, corn)
  • 2 Eggs
  • 2 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 1 tbsp Neutral oil (for cooking)
  • 1 clove Garlic (minced)(optional)
  • 2 tbsp Green onions (sliced)(optional)

Instructions

  1. 1

Prep (10 minutes): If your rice is clumpy, break it up with a fork. Beat the eggs in a bowl. Mince the garlic and slice the green onions (if using).

  2. 2

Cook (5 minutes): Heat a large skillet or wok over high heat with the neutral oil. Add mixed vegetables and stir-fry until hot and lightly tender, about 2 minutes.

  3. 3

Cook (5 minutes): Push vegetables to one side, add beaten eggs to the empty side, and scramble until just set, about 30–60 seconds. Stir everything together.

  4. 4

Cook (5 minutes): Add the rice and stir-fry until evenly heated and slightly dry, about 2 minutes. Add soy sauce and sesame oil, tossing to coat.

  5. 5

Cook (5 minutes): Turn off heat. Taste and adjust soy sauce if needed. Top with green onions (if using) and serve immediately.
