Ingredients

  • 4 oz Dried ramen noodles (discard seasoning packet)
  • 3 tbsp Tahini (or creamy sesame paste)
  • 2 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 tsp Sesame oil
  • 1 tsp Honey (or brown sugar)
  • 1 clove Garlic, minced(optional)
  • 1 tsp Fresh ginger, grated(optional)
  • 1 cup Cucumber, thinly sliced
  • 2 Scallions, thinly sliced
  • 2 tbsp Water (to loosen sauce)(optional)
  • 1 tsp Sesame seeds (optional garnish)(optional)

Instructions

  1. 1

Bring a pot of water to a boil and cook the noodles according to package directions (about 5 minutes). Drain, then reserve 2–3 tbsp of cooking water.

  2. 2

While noodles cook, whisk tahini, soy sauce, rice vinegar, sesame oil, honey, and (if using) garlic and ginger. Add reserved cooking water as needed to make a creamy, pourable sauce.

  3. 3

Toss hot noodles with the sauce until evenly coated. Add cucumber and half the scallions, toss again, and divide into bowls.

  4. 4

Top with remaining scallions (and sesame seeds if using). Serve immediately.
