15-Minute Sesame Noodles

Cold or warm noodles tossed in a savory peanut and sesame soy dressing.

Ingredients

  • 8 oz Lo mein or spaghetti noodles
  • 3 tbsp Tahini or creamy peanut butter
  • 2 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 tbsp Toasted sesame oil
  • 1 tsp Honey or maple syrup
  • 1 tsp Grated ginger
  • 1 clove Minced garlic
  • 1 tsp Chili oil or Sriracha(optional)
  • 2 stalks Green onions, sliced(optional)
  • 1 tsp Toasted sesame seeds(optional)

Instructions

    Boil a large pot of water and cook the noodles according to package instructions.

    While the noodles cook, whisk together the tahini, soy sauce, rice vinegar, sesame oil, honey, ginger, garlic, and chili oil in a small bowl until smooth.

    Reserve 2 tablespoons of the noodle cooking water, then drain the noodles.

    Toss the hot noodles with the sauce and the reserved cooking water until evenly coated.

    Garnish with sliced green onions and toasted sesame seeds before serving warm or at room temperature.
