Ingredients

  • 12 oz large shrimp, peeled and deveined
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2 tbsp lime juice
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 cups cabbage, shredded
  • 1/4 cup plain Greek yogurt
  • 1 tbsp mayonnaise
  • 1 tsp lime zest(optional)
  • 6 corn tortillas
  • 2 tbsp cilantro, chopped(optional)

Instructions

  1. 1

Prep (10 minutes): Shred the cabbage. In a bowl, mix Greek yogurt, mayonnaise, lime zest (if using), a pinch of salt, and a squeeze of lime juice; toss in the cabbage to make quick slaw. Mince the garlic and chop cilantro (if using).

  2. 2

Cook (5 minutes): Pat shrimp dry and season with cumin, chili powder, salt, and pepper. Heat butter in a large skillet over medium-high heat, then sauté shrimp 1–2 minutes per side until just cooked through. Add minced garlic for the final 30–60 seconds, then stir in remaining lime juice.

  3. 3

Serve (within the 15-minute total): Warm tortillas in the microwave or in the skillet for a few seconds. Fill tortillas with shrimp, top with cabbage slaw, and finish with cilantro (if using).
