Ingredients

  • 1 lb boneless, skinless chicken breast
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1.5 tbsp olive oil
  • 1 cup cherry tomatoes
  • 2 cloves garlic
  • 1.5 tbsp balsamic vinegar
  • 6 oz mozzarella
  • 0.25 cup fresh basil

Instructions

  1. 1

Prep (10 minutes): Slice the chicken into cutlets (or thin pieces) and pat dry. Season both sides with salt and black pepper. Halve the cherry tomatoes and mince the garlic.

  2. 2

Cook (15 minutes): Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 4–5 minutes per side until browned and cooked through.

  3. 3

In the last 3–4 minutes, add garlic and cherry tomatoes to the skillet and cook until tomatoes soften and release juices.

  4. 4

Top the chicken with mozzarella. Cover the skillet for 1–2 minutes until the mozzarella melts.

  5. 5

Finish: Turn off heat, drizzle with balsamic vinegar, and scatter with basil. Serve immediately.
