Ingredients

  • 3 cups day-old cooked white rice
  • 3 large eggs
  • 3 scallions
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 tsp sesame oil(optional)
  • 1/4 tsp white pepper(optional)
  • 1/2 cup frozen peas and carrots(optional)

Instructions

  1. 1

Prep: beat the eggs, slice the scallions, and break up any clumps of cold rice with your hands (5 minutes).

  2. 2

Heat 1 tbsp oil in a wok or large skillet over high heat. Pour in the eggs and scramble until just set, about 30 seconds, then transfer to a plate.

  3. 3

Add remaining oil to the wok. Add frozen peas and carrots if using, stir-frying for 1 minute. Add the rice and toss constantly for 2-3 minutes until heated through and slightly crisped.

  4. 4

Return the eggs to the wok, add soy sauce, sesame oil, white pepper, and most of the scallions. Toss everything together for 30 seconds until evenly coated and steaming hot.

  5. 5

Serve immediately, garnished with the remaining scallions.
