Ingredients

  • 300 g boneless, skinless chicken thighs
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sake
  • 1 tbsp brown sugar
  • 1 tsp grated ginger
  • 1 clove garlic
  • 1 tsp neutral oil
  • 2 tbsp green onion (scallions), sliced(optional)

Instructions

  1. 1

Prep (15 minutes): Cut chicken into 2–3 cm chunks. Thread onto skewers (or use a grill pan method without skewers). If using wooden skewers, soak them in water for at least 10 minutes while you prep.

  2. 2

Make tare (during prep): In a bowl, whisk soy sauce, mirin, sake, brown sugar, grated ginger, and minced garlic until the sugar dissolves.

  3. 3

Cook (15 minutes): Heat a skillet or grill pan over medium-high heat and add the neutral oil. Cook chicken, turning every 1–2 minutes, until browned and cooked through (about 8–10 minutes total).

  4. 4

Glaze: Reduce heat to medium. Pour in the tare and simmer, turning the chicken to coat, until the sauce thickens and becomes glossy (about 3–5 minutes).

  5. 5

Serve: Plate the skewers and spoon any extra glaze over the top. Garnish with green onion if using.
