Ingredients

  • 300 g chicken breast
  • 170 g plain yogurt (unsweetened)
  • 2 tbsp mango chutney
  • 1 tbsp lime juice
  • 2 cloves garlic
  • 1 tsp ginger
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil(optional)
  • 1 tbsp fresh cilantro (optional)(optional)

Instructions

  1. 1

Prep (15 minutes): Cut chicken into 1-inch pieces. In a bowl, mix yogurt, mango chutney, lime juice, minced garlic, grated ginger, chili powder, cumin, salt, and black pepper.

  2. 2

Coat and marinate briefly: Add chicken to the marinade and toss until well coated. Let sit while you preheat the oven to 220°C (425°F) or heat a skillet over medium-high.

  3. 3

Cook (20 minutes): Bake on a lined tray for 18–20 minutes, flipping once halfway, until cooked through (no longer pink).

  4. 4

Pan-cook alternative: Heat olive oil in a skillet, add chicken (reserve any thick marinade), and cook 10 minutes per side or until cooked through, then stir in reserved marinade for 1–2 minutes to thicken.

  5. 5

Serve: Rest 2 minutes, then garnish with cilantro if using. Spoon any pan juices over the chicken.
