Ingredients
- 1/2 cup Jasmine or long-grain rice
- 1 cup Coconut milk (unsweetened)
- 1 cup Water
- 1 Lime (zest and juice)
- 1/2 cup Cucumber (diced)
- 1/4 tsp Salt(optional)
- 1/8 tsp Black pepper(optional)
Instructions
- 1
Rinse the rice until the water runs mostly clear. In a small pot, combine the rice, water, coconut milk, lime zest, and salt (if using).
- 2
Bring to a gentle simmer, then cover and cook for 15–18 minutes, until the rice is tender and the liquid is mostly absorbed.
- 3
Turn off the heat and let the rice sit, covered, for 2 minutes to finish steaming. Fluff with a fork and stir in lime juice to taste.
- 4
Serve the coconut lime rice in bowls and top with diced cucumber. Add black pepper and an extra squeeze of lime if desired.
