Ingredients
- 12 oz chicken thighs, boneless skinless
- 1 cup coconut milk (full-fat)
- 2 tbsp lime juice
- 1 tsp lime zest
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup water or chicken broth(optional)
Instructions
- 1
Prep (10 minutes): Pat chicken dry and season with salt and black pepper. Mince garlic and grate ginger; zest and juice the lime.
- 2
Cook (25 minutes): Heat olive oil in a skillet over medium-high heat. Sear chicken for 3–4 minutes per side until browned, then reduce heat to medium.
- 3
Add garlic and ginger and cook for 30–60 seconds until fragrant. Pour in coconut milk and add water or broth if needed to help the sauce loosen.
- 4
Simmer for 15–18 minutes, turning chicken once, until cooked through and the sauce thickens.
- 5
Finish: Stir in lime juice and lime zest and simmer 1–2 minutes. Serve hot with the coconut-lime sauce.
