Ingredients

  • 200 g udon noodles
  • 200 g chicken breast
  • 60 g plain yogurt
  • 2 tbsp tandoori spice blend
  • 500 ml vegetable broth
  • 1 tbsp soy sauce
  • 2 stalks green onions(optional)
  • 1 tsp sesame oil(optional)

Instructions

  1. 1

In a bowl, combine the yogurt, tandoori spice blend, and a pinch of salt; add the chicken, coat well, and let it sit while you prepare the broth.

  2. 2

Bring the vegetable broth to a gentle simmer in a pot, stir in soy sauce and sesame oil, then add the marinated chicken pieces and cook for about 5 minutes until just cooked through.

  3. 3

Meanwhile, cook the udon noodles according to package directions (usually 2–3 minutes), drain, and divide into two bowls.

  4. 4

Ladle the hot broth and chicken over the noodles, garnish with sliced green onions if using, and serve immediately.
