Thai Green Curry with Tofu

Ingredients
- 14 oz Extra-firm tofu
- 3 tbsp Green curry paste
- 14 oz Coconut milk
- 1 cup Bamboo shoots(optional)
- 1 medium Red bell pepper
- 0.5 cup Thai basil leaves
- 1 tbsp Soy sauce
- 1 tsp Coconut sugar
- 1 tbsp Vegetable oil
Instructions

Press the tofu to remove excess moisture, then cut into 1-inch cubes.

Heat oil in a large wok or skillet over medium heat. Add the tofu and sear until golden on all sides. Remove and set aside.

In the same pan, add the green curry paste and fry for 1 minute until fragrant.

Slowly pour in the coconut milk and stir until the paste is fully dissolved.

Add the bell peppers and bamboo shoots. Simmer for 5-7 minutes until vegetables are tender.

Stir in the soy sauce, coconut sugar, and the cooked tofu.

Remove from heat and fold in the fresh Thai basil leaves.

Serve hot over jasmine rice.
