Ingredients

  • 1 lb ground turkey
  • 4 scallions
  • 2 tbsp grated fresh ginger
  • 3 cloves garlic
  • 1/4 cup coconut aminos
  • 1 tbsp rice vinegar
  • 2 tbsp maple syrup
  • 2 tbsp avocado oil
  • 2 tbsp ground flaxseed
  • 1 cup white rice
  • 2 tbsp toasted pumpkin seeds
  • 1/2 tsp salt

Instructions

  1. 1

Cook the white rice according to package directions.

  2. 2

In a bowl, combine the ground turkey, half the grated ginger, half the minced garlic, the ground flaxseed, chopped white parts of 2 scallions, and salt. Mix well and form into 10 meatballs.

  3. 3

Heat the avocado oil in a large skillet over medium heat. Brown the meatballs on all sides, about 6 minutes, then cook through another 5-6 minutes. Transfer to a plate.

  4. 4

Add the coconut aminos, maple syrup, rice vinegar, and remaining ginger and garlic to the skillet. Simmer 2 minutes until slightly thickened.

  5. 5

Return the meatballs to the pan and toss in the glaze for 1 minute. Serve over rice, garnished with sliced scallion greens and toasted pumpkin seeds.
