Ingredients

  • 200 g chicken thighs
  • 2 medium zucchini
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp erythritol sweetener
  • 1 clove garlic
  • 1 tsp fresh ginger
  • 2 tsp sesame oil
  • 1 tbsp toasted sesame seeds
  • 2 stalks scallions
  • 1/4 tsp xanthan gum(optional)
  • 1 tbsp neutral oil

Instructions

  1. 1

Whisk soy sauce, rice vinegar, erythritol, grated garlic, and grated ginger; sprinkle in xanthan gum if using for a thicker glaze.

  2. 2

Season chicken thighs and sear in neutral oil over medium-high heat 5–6 minutes per side until cooked through.

  3. 3

Pour in the sauce and simmer 2–3 minutes, spooning the glaze over the chicken until sticky.

  4. 4

Spiralize zucchini and sauté briefly in sesame oil for 1–2 minutes; do not overcook.

  5. 5

Plate zucchini noodles, top with sliced chicken and remaining glaze, and finish with sesame seeds and sliced scallions.
