Ingredients

  • 1 lb boneless skinless chicken thighs, cut into bite-sized pieces
  • 3 cups broccoli florets
  • 1/4 cup soy sauce
  • 3 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp vegetable oil
  • 1 tsp sesame seeds(optional)
  • 2 cups cooked white rice, for serving(optional)

Instructions

  1. 1

Whisk together soy sauce, honey, rice vinegar, cornstarch, garlic, and ginger in a small bowl to make the teriyaki sauce. (Prep: 10 minutes total, including chopping chicken and broccoli.)

  2. 2

Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add chicken in a single layer and cook 5-6 minutes, stirring occasionally, until golden and cooked through. Remove to a plate.

  3. 3

Add remaining oil to the skillet, then stir-fry broccoli for 3-4 minutes until crisp-tender.

  4. 4

Return chicken to the skillet, pour in the teriyaki sauce, and toss constantly for 2-3 minutes until the sauce thickens and coats everything. (Total cook time: 15 minutes.)

  5. 5

Serve hot over rice and sprinkle with sesame seeds if desired.
