Ingredients

  • 12 oz lean ground beef
  • 1/4 cup teriyaki sauce
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp honey or brown sugar
  • 2 cloves garlic
  • 1 tsp ginger (grated)
  • 1/2 small red onion (thinly sliced)
  • 2 tbsp water
  • 1/4 tsp kosher salt
  • 8 cups iceberg or romaine lettuce leaves
  • 1 tsp sesame oil(optional)
  • 1 tbsp sesame seeds(optional)

Instructions

  1. 1

Quick pickle the onions: in a small bowl, mix sliced red onion with rice vinegar, water, honey (or brown sugar), and salt. Set aside while you cook (about 10 minutes).

  2. 2

Cook the beef: heat a skillet over medium-high heat. Add ground beef and cook until browned and cooked through, 6–7 minutes, breaking it up as it cooks.

  3. 3

Add flavor: stir in garlic, ginger, soy sauce, and teriyaki sauce. Cook 5–6 minutes more, stirring, until the sauce is glossy and coats the beef.

  4. 4

Assemble: spoon teriyaki beef into lettuce cups. Top with quick-pickled onions and, if using, sesame oil and sesame seeds. Serve immediately.
