Ingredients

  • 12 pieces large shrimp, peeled and deveined
  • 1/2 cup all-purpose flour
  • 1/4 cup cold sparkling water
  • 1 egg
  • 2 cups vegetable oil (for frying)
  • 1 teaspoon chaat masala
  • 1/4 teaspoon sea salt
  • 1 lemon wedge(optional)

Instructions

  1. 1

In a bowl, whisk together the flour, egg, and cold sparkling water until a smooth, thin batter forms; let it rest for 2 minutes.

  2. 2

Heat the vegetable oil in a deep pan or pot to 180 °C (350 °F). Pat the shrimp dry, then dip each piece into the batter and carefully lower into the hot oil, frying in batches to avoid crowding.

  3. 3

Fry the shrimp for 2–3 minutes, turning once, until the coating is golden and the shrimp are opaque; remove with a slotted spoon and drain on paper towels.

  4. 4

While the shrimp are still hot, sprinkle the chaat masala and sea salt evenly over them.

  5. 5

Serve immediately with a lemon wedge on the side.
