Ingredients

Servings:4
  • 1 lb Chicken wings (middle joint and tip)
  • 1 1/2 teaspoons Kosher salt
  • 1 tablespoon Toasted sesame oil
  • 2 tablespoons Sake (Japanese rice wine)
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon White pepper
  • 1/4 teaspoon Garlic powder
  • 1 whole Lemon wedges(optional)
  • 1 teaspoon Toasted sesame seeds(optional)

Instructions

  1. 1

Pat the chicken wings extremely dry with paper towels to remove all surface moisture.

  2. 2

Place wings in a bowl and toss with sake and sesame oil to lightly coat.

  3. 3

In a small ramekin, mix the salt, baking powder, white pepper, and garlic powder.

  4. 4

Sprinkle the dry seasoning mix evenly over the wings, ensuring the skin is well-coated.

  5. 5

Preheat your grill or oven broiler to medium-high heat (about 400°F/200°C).

  6. 6

Arrange wings on a wire rack over a baking sheet to allow air circulation for maximum crispiness.

  7. 7

Grill or broil for 8-10 minutes per side until the skin is bubbling, golden brown, and rendered thin.

  8. 8

Remove from heat and let rest for 2 minutes before serving with a squeeze of fresh lemon.
