Ingredients

  • 4 large Eggs
  • 1 tablespoon Sugar
  • 1 teaspoon Soy sauce
  • 1 teaspoon Mirin
  • 1 tablespoon Vegetable oil(optional)

Instructions

  1. 1

In a bowl, whisk together the eggs, sugar, soy sauce, and mirin until fully combined and slightly frothy.

  2. 2

Heat a rectangular tamago-yaki pan over medium-low heat and lightly brush with vegetable oil.

  3. 3

Pour a thin layer of the egg mixture into the pan, tilting to coat the surface, and cook until the surface is set but still slightly moist.

  4. 4

Roll the cooked layer from one end to the other using chopsticks or a spatula, then push the roll back to the starting side.

  5. 5

Repeat the process, adding more oil if needed, until all the egg mixture is used, forming multiple rolled layers.

  6. 6

Transfer the rolled omelette to a cutting board, let it rest for 1 minute, then slice into bite‑size pieces.
