Ingredients

  • 4 large Eggs
  • 1 tsp Dashi stock (instant powder)
  • 1 tbsp Soy sauce
  • 40 g Vegan cheese (shredded, mild)
  • 1 tbsp Sugar
  • 1 tbsp Vegetable oil
  • 1 stalk, sliced Green onion (optional garnish)(optional)

Instructions

  1. 1

In a bowl, whisk together the eggs, dashi powder, soy sauce, and sugar until the mixture is smooth and slightly frothy.

  2. 2

Heat a non‑stick skillet over medium‑low heat and add ½ tbsp of oil, swirling to coat the surface.

  3. 3

Pour a thin layer of the egg mixture into the pan, tilting to cover the bottom; cook for about 30 seconds until just set, then sprinkle half of the vegan cheese over the surface.

  4. 4

When the cheese begins to melt, gently fold the omelette in half, slide it to one side of the pan, and add another ½ tbsp of oil.

  5. 5

Repeat with the remaining egg mixture to create a second layer, adding the remaining cheese, and fold the first layer over the second to form a stacked, layered omelette.

  6. 6

Cook for another 30 seconds, then slide the tamago onto a plate, garnish with sliced green onion if desired, and serve warm.
