Ingredients

  • 8 oz sushi-grade ahi tuna, diced
  • 2 tbsp soy sauce
  • 1 tbsp sriracha
  • 2 tbsp mayonnaise
  • 4 sheets nori sheets
  • 1.5 cups sushi rice, cooked and cooled
  • 0.5 cup cucumber, thinly sliced
  • 0.5 cup cherry tomatoes, diced
  • 2 tbsp red onion, finely diced
  • 1 tbsp lime juice
  • 2 tbsp cilantro, chopped(optional)
  • 1 tsp sesame seeds(optional)

Instructions

  1. 1

In a bowl, mix diced tuna with soy sauce, sriracha, and mayonnaise. Marinate in the refrigerator for 10 minutes.

  2. 2

Meanwhile, make the fresh salsa: combine cherry tomatoes, red onion, lime juice, and cilantro in a small bowl and toss well.

  3. 3

Prepare the sushi rice and slice the cucumber into thin matchsticks.

  4. 4

Lay a nori sheet shiny-side down, add a small handful of rice on one side, then top with marinated tuna, cucumber, and salsa.

  5. 5

Roll the nori into a cone shape around the filling, sealing the edge with a dab of rice or water. Repeat with remaining sheets.

  6. 6

Sprinkle with sesame seeds and serve immediately, within 5 minutes of rolling.
