Ingredients

  • 2 packs Ramen noodles (instant or fresh)
  • 1/2 cup Kimchi
  • 250 g Ground pork
  • 1 tbsp Gochugaru (Korean red pepper flakes)
  • 1 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 2 cloves Garlic
  • 1 tsp Ginger (grated)
  • 2 pieces Scallions (green onions), sliced
  • 2 Eggs
  • 4 cups Water or low-sodium broth

Instructions

  1. 1

Prep (10 minutes): Slice scallions. Mince garlic and grate ginger. Crack eggs into a small bowl.

  2. 2

Cook eggs (part of 18 minutes): Bring a small pot of water to a gentle boil. Lower eggs in and simmer 6–7 minutes for a jammy yolk, then transfer to cold water and peel.

  3. 3

Cook pork and kimchi: In a large pot or deep skillet over medium-high heat, add sesame oil, then cook ground pork 5–6 minutes until browned. Add garlic and ginger and cook 30 seconds. Stir in kimchi and gochugaru, then add soy sauce and 4 cups water/broth. Simmer 6–7 minutes.

  4. 4

Cook ramen: Add ramen noodles (discard seasoning packets if using) and cook according to package directions until tender, about 2–3 minutes.

  5. 5

Serve: Divide noodles and broth into bowls. Top with jammy eggs and sprinkle with scallions.
