Spicy Arrabbiata Penne

Ingredients
- 400 grams Penne pasta
- 800 grams Canned crushed tomatoes
- 4 Garlic cloves, minced
- 3 tablespoons Extra virgin olive oil
- 2 teaspoons Dried red chili flakes
- 0.25 cup Fresh parsley, chopped
- 1 pinch Salt
- 0.25 cup Parmesan cheese(optional)

Bring a large pot of salted water to a boil and cook the penne according to package instructions until al dente.

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Add the minced garlic and red chili flakes to the skillet. Sauté for 1-2 minutes until the garlic is fragrant but not browned.

Pour in the crushed tomatoes and add a pinch of salt. Simmer the sauce for 10-12 minutes, stirring occasionally.

Reserve half a cup of pasta water, then drain the penne.

Toss the pasta into the skillet with the sauce. Add a splash of pasta water if the sauce is too thick.

Stir in the fresh parsley and serve immediately, topped with Parmesan if desired.
