Ingredients
- 500 g Mascarpone cheese
- 300 g Ladyfinger cookies (Savoiardi)
- 1.5 cups Strong espresso coffee, cooled
- 0.5 cup Granulated sugar
- 1 cup Heavy cream
- 1 tsp Vanilla extract
- 2 tbsp Unsweetened cocoa powder
- 2 tbsp Dark rum or Amaretto(optional)

In a large bowl, whisk the mascarpone cheese, sugar, and vanilla extract until smooth.

In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the mascarpone mixture.

Mix the cooled espresso and optional liquor in a shallow dish.

Quickly dip each ladyfinger into the coffee mixture (do not soak them through) and arrange them in a single layer at the bottom of a 9x9 inch baking dish.

Spread half of the mascarpone cream over the ladyfingers.

Repeat with another layer of dipped ladyfingers and the remaining cream.

Cover and refrigerate for at least 4 to 6 hours, preferably overnight, to allow the flavors to meld and the structure to set.

Just before serving, dust the top generously with cocoa powder.
