
Spiced Fava Bean Taameya

Ingredients
- 500 grams Dried split fava beans (peeled)
- 1 cup Fresh parsley
- 1 cup Fresh cilantro
- 1 cup Fresh leek (white and light green parts)
- 5 cloves Garlic cloves
- 2 tablespoons Ground coriander
- 1 tablespoon Ground cumin
- 0.5 teaspoon Cayenne pepper(optional)
- 0.5 teaspoon Baking soda
- 1.5 teaspoons Salt
- 0.25 cup Toasted sesame seeds
- 3 cups Vegetable oil for frying

Soak the dried fava beans in plenty of water for at least 12 hours or overnight until tender.

Drain the beans thoroughly and pat them dry to remove excess moisture.

In a food processor, pulse the beans, parsley, cilantro, leek, and garlic until a smooth, bright green paste forms.

Transfer the mixture to a bowl and stir in the salt, cumin, coriander, cayenne, and baking soda.

Use a whisk or your hand to beat the mixture for 2 minutes to incorporate air, making the taameya fluffy.

Form the mixture into small discs or patties, and press one side into the sesame seeds.

Heat the oil in a deep pan to 350°F (175°C) and fry the patties in batches until golden brown and crispy on the outside.

Drain on paper towels and serve hot with pita bread and tahini sauce.
